Ingredients

  • Noodle sheets - 5 oz
  • Onion - 1
  • Spring onions - 3 stalks
  • Tomatoes - 2
  • Pork - 10 oz (thinly sliced)

  • A little chili powder, ground pepper, and turmeric powder
  • A little sauce for frying the noodles (mix well: tamarind pulp, sesame oil, garlic, and ginger)
  • A little mustard greens

Step-by-step preparation

1. Heat a pot, add water, and bring it to a boil. Then add the noodles and boil for about 8 to 10 minutes. Once the noodles are soft, rinse them with cold water and set them aside separately in a bowl.

2. Peel the onion and slice it thinly.

Slice the spring onions thinly on the diagonal, separating the white and green parts. The white part of the spring onion will be used for frying, and the green part will be used for garnish.

Remove the core from the tomatoes and cut them into small cubes.

3. Heat a wok and add 2 tablespoons of oil. Add the onion, salt, and chili powder, and stir-fry for about 3 minutes.

Then add the pork and fry until it turns brown. Add the white part of the spring onions and stir-fry for about 2 minutes. Add the tomatoes. Add about 8 tablespoons of water and wait until it comes to a boil. After boiling for about 3 minutes, remove it from the stove.

4. In another wok, add a little oil and add the mustard greens. Add a little salt and chili powder and fry for about 2 to 3 minutes.

5. Put the wok with the fried pork back on the stove, add the mustard greens and the noodles, and stir-fry well until combined. Taste for saltiness, and if needed, add more salt and chili powder.
