Hello to all our bitter-loving readers! Bitter gourd is well known to be especially good for health. Even though it has a distinctly bitter taste, some people really enjoy bitter gourd. So here's the recipe for it.
Ingredients
- Small bitter gourds – 20 (cut in half)
- Shallots – 2 bulbs (pounded)
- Garlic – 8 cloves (pounded)
- Tomatoes – 3 (thinly sliced)
- Fermented shrimp paste (ngapi) – 1 tablespoon (dissolved in liquid)
- Crushed chili powder – 2 tablespoons
- Oil – 3 tablespoons
- Turmeric powder – a little
- Salt – a little
- Water – a little
Method
Cut the bitter gourd in half, remove the seeds, rub with salt, squeeze out the bitter juices, then rinse thoroughly with water.
In a pot, add the bitter gourd, pounded shallots, garlic, turmeric powder, crushed chili powder, dried shrimp, ngapi, tomatoes, oil, and salt, then mix and stir-fry together.
Once fragrant, add a little water and simmer over low heat covered. After about 30 minutes, the bitter gourd curry will be tender and ready to serve.
Taste and adjust the seasoning to your preference before serving. No sugar is included at all — you may add it according to your own taste.
