First, wash the soft-shell crab under running water. This will help remove any dirt and odor from the crab.
Trim the eye area and the front part of the face with scissors.
Pull off the upper shell starting from the back part.
Turn the soft-shell crab over and completely remove the small triangular flap covering the back.
Now the soft-shell crab is ready to cook.
